Captain John can give you all the expert tips, but it's a simple task: use your tickle stick to coax the Lobsters into your net without letting them swim away, because if they decide to take off, they're surprisingly speedy. Once they're netted, you can swim back to the surface and throw that bug on ice! Captain John provides the nets and sticks, but you'll need to bring along your own snorkel, scuba mask, fins, and gloves if you choose to wear them.
